
African-Inspired Coconut Curry Stew

Ingredients
- 1 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 tbsp ginger, grated
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 can (400g) chickpeas, drained and rinsed
- 1 can (400ml) coconut milk
- 1 cup vegetable broth
- 2 cups sweet potatoes, peeled and cubed
- 1 cup baby spinach
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and cook until translucent.
- Stir in the minced garlic, grated ginger, cumin, coriander, and turmeric. Cook for 1-2 minutes until fragrant.
- Add the chickpeas, coconut milk, and vegetable broth. Stir well to combine.
- Bring the mixture to a simmer, then add the sweet potatoes. Cook for about 15-20 minutes until the sweet potatoes are tender.
- Stir in the baby spinach and cook until wilted. Season with salt and pepper.
- Serve the coconut curry stew hot, garnished with fresh cilantro.
