Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 tbsp ginger, grated
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 can (400ml) coconut milk
  • 1 cup vegetable broth
  • 2 cups sweet potatoes, peeled and cubed
  • 1 cup baby spinach
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Stir in the minced garlic, grated ginger, cumin, coriander, and turmeric. Cook for 1-2 minutes until fragrant.
  4. Add the chickpeas, coconut milk, and vegetable broth. Stir well to combine.
  5. Bring the mixture to a simmer, then add the sweet potatoes. Cook for about 15-20 minutes until the sweet potatoes are tender.
  6. Stir in the baby spinach and cook until wilted. Season with salt and pepper.
  7. Serve the coconut curry stew hot, garnished with fresh cilantro.
