Ingredients

  • 4 large bell peppers
  • 1 lb ground turkey
  • 1/2 cup dried cranberries
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1 cup cooked quinoa
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, cook the ground turkey, onion, garlic, thyme, rosemary, salt, and pepper until the turkey is no longer pink.
  4. Stir in the cranberries, cooked quinoa, and Parmesan cheese.
  5. Divide the mixture among the bell peppers.
  6. Place the stuffed bell peppers in a baking dish, cover with foil, and bake for 25-30 minutes.
  7. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the filling is heated through.
