
Christmas Stuffed Bell Peppers
A festive twist on a classic dish, these Christmas stuffed bell peppers are filled with a delicious mix of ground turkey, cranberries, and herbs.

Ingredients
- 4 large bell peppers
- 1 lb ground turkey
- 1/2 cup dried cranberries
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 1 cup cooked quinoa
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, cook the ground turkey, onion, garlic, thyme, rosemary, salt, and pepper until the turkey is no longer pink.
- Stir in the cranberries, cooked quinoa, and Parmesan cheese.
- Divide the mixture among the bell peppers.
- Place the stuffed bell peppers in a baking dish, cover with foil, and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10 minutes until the peppers are tender and the filling is heated through.
