Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1/2 cup flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1 egg
  • 1 avocado, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 8 small corn tortillas
  • Vegetable oil for frying

Instructions

  1. 1. In a bowl, mix coconut, flour, salt, pepper, and paprika.
  2. 2. In another bowl, beat the egg.
  3. 3. Dip each shrimp in the egg, then coat with the coconut mixture.
