Corn Cake

A delicious and traditional June Festival treat made with cornmeal and a touch of coconut.

Ingredients

  • 2 cups of cornmeal
  • 1 cup of sugar
  • 1 cup of grated coconut
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of salt
  • 3 eggs
  • 1 cup of milk
  • 1/2 cup of vegetable oil

Instructions

  1. 1. Preheat the oven to 350°F (180°C).
  2. 2. In a bowl, mix the cornmeal, sugar, coconut, baking powder, and salt.
  3. 3. Add the eggs, milk, and oil to the dry ingredients and mix well.
  4. 4. Pour the batter into a greased baking pan.
  5. 5. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  6. 6. Let it cool before serving.
