
Corn Cake
A delicious and traditional June Festival treat made with cornmeal and a touch of coconut.

Ingredients
- 2 cups of cornmeal
- 1 cup of sugar
- 1 cup of grated coconut
- 1 tablespoon of baking powder
- 1/2 teaspoon of salt
- 3 eggs
- 1 cup of milk
- 1/2 cup of vegetable oil
Instructions
- 1. Preheat the oven to 350°F (180°C).
- 2. In a bowl, mix the cornmeal, sugar, coconut, baking powder, and salt.
- 3. Add the eggs, milk, and oil to the dry ingredients and mix well.
- 4. Pour the batter into a greased baking pan.
- 5. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
- 6. Let it cool before serving.
