
Easter Bunny Cake

Ingredients
- 3 cups all-purpose flour
- 2 cups sugar
- 1 cup unsalted butter, softened
- 4 eggs
- 1 cup milk
- 1 tablespoon vanilla extract
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup shredded coconut
- Green food coloring
- Pink food coloring
- Candy eyes
- Pink jelly beans
- Pink icing
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour a bunny-shaped cake pan.
- In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- Combine the flour, baking powder, and salt; gradually stir into the creamed mixture. Finally, mix in the milk until the batter is smooth. Pour or spoon the batter into the prepared pan.
- Bake for 45 to 50 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
- Once the cake has cooled, use green food coloring to tint the coconut green. Frost the cake with pink icing and press the coconut onto the frosting to resemble grass.
- Use pink food coloring to dye some shredded coconut pink. Shape two small portions of the pink coconut into feet and a tail. Place candy eyes, pink jelly beans, and the pink coconut feet and tail on the cake to create the bunny's face and paws.
