Ingredients

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1 cup unsalted butter, softened
  • 4 eggs
  • 1 cup milk
  • 1 tablespoon vanilla extract
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shredded coconut
  • Green food coloring
  • Pink food coloring
  • Candy eyes
  • Pink jelly beans
  • Pink icing

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a bunny-shaped cake pan.
  2. In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  3. Combine the flour, baking powder, and salt; gradually stir into the creamed mixture. Finally, mix in the milk until the batter is smooth. Pour or spoon the batter into the prepared pan.
  4. Bake for 45 to 50 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
  5. Once the cake has cooled, use green food coloring to tint the coconut green. Frost the cake with pink icing and press the coconut onto the frosting to resemble grass.
  6. Use pink food coloring to dye some shredded coconut pink. Shape two small portions of the pink coconut into feet and a tail. Place candy eyes, pink jelly beans, and the pink coconut feet and tail on the cake to create the bunny's face and paws.
