Easter Lamb Roast

A traditional Easter dish featuring succulent roasted lamb with aromatic herbs and spices.

Ingredients

  • 5 lbs leg of lamb
  • 6 cloves of garlic, minced
  • 2 tbsp chopped fresh rosemary
  • 2 tbsp chopped fresh thyme
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix together the garlic, rosemary, thyme, olive oil, salt, and pepper to make a paste.
  3. Rub the paste all over the lamb and let it marinate for at least 1 hour.
  4. Place the lamb in a roasting pan and roast in the oven for 2-2.5 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare or 160°F (71°C) for medium.
  5. Let the lamb rest for 15 minutes before slicing and serving.
