Grilled Halloumi Tacos

These vegetarian grilled halloumi tacos are packed with flavor and perfect for a meatless meal.

Ingredients

  • 8 oz halloumi cheese, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 8 small tortillas
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • Fresh cilantro for garnish

Instructions

  1. 1. In a bowl, combine olive oil, paprika, cumin, salt, and pepper. Add sliced halloumi, bell peppers, and onion, toss to coat.
  2. 2. Heat a grill pan over medium-high heat. Grill halloumi and vegetables until charred and softened.
  3. 3. Warm tortillas on the grill pan. Fill with grilled halloumi and vegetables.
  4. 4. Top with salsa, sour cream, and fresh cilantro. Serve and enjoy!
