Grilled Pineapple and Shrimp Skewers

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 fresh pineapple, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 2 tbsp olive oil
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine olive oil, soy sauce, garlic, and ginger. Add shrimp and marinate for 15 minutes.
  2. Thread shrimp, pineapple, bell pepper, and onion onto skewers.
