
Lobster Ravioli with Saffron Cream Sauce

Ingredients
- 1 lb lobster meat, cooked and chopped
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese

- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 package of wonton wrappers
- 2 cups heavy cream
- 1/4 tsp saffron threads
- 1/4 cup grated Pecorino Romano cheese
Instructions
- In a bowl, mix lobster meat, ricotta, Parmesan, parsley, salt, and pepper.
- Place a spoonful of the lobster filling onto a wonton wrapper, brush edges with water, and seal.
- Boil ravioli in salted water until they float, about 2-3 minutes.
- In a saucepan, heat cream with saffron until warm, remove saffron threads.
- Add Pecorino Romano to the cream sauce and stir until melted.
