Ingredients

  • 1 lb lobster meat, cooked and chopped
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese

  • 1/4 tsp black pepper
  • 1 package of wonton wrappers
  • 2 cups heavy cream
  • 1/4 tsp saffron threads
  • 1/4 cup grated Pecorino Romano cheese

Instructions

  1. In a bowl, mix lobster meat, ricotta, Parmesan, parsley, salt, and pepper.
  2. Place a spoonful of the lobster filling onto a wonton wrapper, brush edges with water, and seal.
  3. Boil ravioli in salted water until they float, about 2-3 minutes.
