Low-Carb Cauliflower Fried Rice

A delicious and healthy low-carb version of traditional fried rice using cauliflower instead of rice.

Ingredients

  • 1 head of cauliflower, grated
  • 2 eggs, beaten
  • 1/2 cup of mixed vegetables (peas, carrots, corn)
  • 2 cloves of garlic, minced
  • 2 tbsp of soy sauce
  • 1 tbsp of sesame oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat some oil over medium heat.
  2. Add garlic and mixed vegetables, cook until softened.
  3. Push vegetables to the side and add beaten eggs, scramble until cooked.
  4. Add grated cauliflower, soy sauce, sesame oil, salt, and pepper.
  5. Stir everything together and cook for another 5 minutes.
  6. Serve hot and enjoy!
