
Low-Carb Cauliflower Fried Rice
A delicious and healthy low-carb version of traditional fried rice using cauliflower instead of rice.

Ingredients
- 1 head of cauliflower, grated
- 2 eggs, beaten
- 1/2 cup of mixed vegetables (peas, carrots, corn)
- 2 cloves of garlic, minced
- 2 tbsp of soy sauce
- 1 tbsp of sesame oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat some oil over medium heat.
- Add garlic and mixed vegetables, cook until softened.
- Push vegetables to the side and add beaten eggs, scramble until cooked.
- Add grated cauliflower, soy sauce, sesame oil, salt, and pepper.
- Stir everything together and cook for another 5 minutes.
- Serve hot and enjoy!
