
Mexican Street Corn Pasta
A delicious and creamy pasta dish inspired by Mexican street corn flavors.

Ingredients
- 8 oz pasta
- 2 cups corn kernels
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/2 cup cotija cheese
- 1/4 cup chopped cilantro
- 1 tbsp chili powder
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, sauté the corn kernels until lightly charred.
- In a bowl, mix together sour cream, mayonnaise, half of the cotija cheese, cilantro, chili powder, lime juice, salt, and pepper.
- Add the cooked pasta and corn to the skillet with the sauce. Toss to combine.
- Serve the pasta topped with the remaining cotija cheese and extra cilantro.
