Mexican Street Corn Pasta

A delicious and creamy pasta dish inspired by Mexican street corn flavors.

Ingredients

  • 8 oz pasta
  • 2 cups corn kernels
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup cotija cheese
  • 1/4 cup chopped cilantro
  • 1 tbsp chili powder
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, sauté the corn kernels until lightly charred.
  3. In a bowl, mix together sour cream, mayonnaise, half of the cotija cheese, cilantro, chili powder, lime juice, salt, and pepper.
  4. Add the cooked pasta and corn to the skillet with the sauce. Toss to combine.
  5. Serve the pasta topped with the remaining cotija cheese and extra cilantro.
