
Miso Glazed Eggplant

- 2 medium eggplants
- 1/4 cup miso paste
- 2 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp maple syrup
- 2 cloves garlic, minced
- 1 tbsp sesame oil
- Sesame seeds and green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the eggplants in half lengthwise and score the flesh in a crisscross pattern.
- In a small bowl, mix the miso paste, soy sauce, mirin, maple syrup, garlic, and sesame oil.
- Brush the eggplants with the miso mixture, making sure to coat them evenly.
- Roast in the oven for about 30 minutes, or until the eggplants are tender and caramelized.
