Ingredients

  • 2 medium eggplants
  • 1/4 cup miso paste
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tbsp maple syrup
  • 2 cloves garlic, minced
  • 1 tbsp sesame oil
  • Sesame seeds and green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the eggplants in half lengthwise and score the flesh in a crisscross pattern.
  3. In a small bowl, mix the miso paste, soy sauce, mirin, maple syrup, garlic, and sesame oil.
  4. Brush the eggplants with the miso mixture, making sure to coat them evenly.
  5. Roast in the oven for about 30 minutes, or until the eggplants are tender and caramelized.
  6. Garnish with sesame seeds and chopped green onions before serving.
