Ingredients

  • 2 medium eggplants, sliced lengthwise
  • 1/4 cup white miso paste
  • 2 tbsp maple syrup
  • 2 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1/4 cup sliced green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, whisk together miso paste, maple syrup, soy sauce, and garlic.
  3. Brush the eggplant slices with the miso glaze and grill for 3-4 minutes per side.
  4. In a saucepan, bring the vegetable broth to a boil, add quinoa, cover, and simmer for 15-20 minutes.
