
Miso Glazed Eggplant with Quinoa

Ingredients
- 2 medium eggplants, sliced lengthwise
- 1/4 cup white miso paste
- 2 tbsp maple syrup
- 2 tbsp soy sauce
- 2 cloves garlic, minced
- 1 cup quinoa
- 2 cups vegetable broth
- 1/4 cup sliced green onions, for garnish
- Sesame seeds, for garnish
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, whisk together miso paste, maple syrup, soy sauce, and garlic.
- Brush the eggplant slices with the miso glaze and grill for 3-4 minutes per side.
- In a saucepan, bring the vegetable broth to a boil, add quinoa, cover, and simmer for 15-20 minutes.
- Serve the grilled miso glazed eggplant over cooked quinoa, garnish with green onions and sesame seeds.
