
Mushroom, Spinach, and Feta Stuffed Bell Peppers

Ingredients
- 4 bell peppers, halved and deseeded
- 2 cups mushrooms, chopped
- 2 cups spinach, chopped
- 1/2 cup feta cheese, crumbled
- 2 cloves garlic, minced
- 1 onion, diced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a pan, heat olive oil and sauté garlic and onion until fragrant.
- Add mushrooms and cook until they release their juices. Season with salt and pepper.
- Stir in the spinach until wilted, then remove from heat.
- Fill each bell pepper half with the mushroom-spinach mixture and top with crumbled feta cheese.
- Bake for 20-25 minutes until the peppers are tender.
