Mushroom, Spinach, and Feta Stuffed Bell Peppers

Ingredients

  • 4 bell peppers, halved and deseeded
  • 2 cups mushrooms, chopped
  • 2 cups spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, heat olive oil and sauté garlic and onion until fragrant.
  3. Add mushrooms and cook until they release their juices. Season with salt and pepper.
  4. Stir in the spinach until wilted, then remove from heat.
  5. Fill each bell pepper half with the mushroom-spinach mixture and top with crumbled feta cheese.
  6. Bake for 20-25 minutes until the peppers are tender.
  7. Serve hot and enjoy!
