Pumpkin Mac and Cheese

A Thanksgiving twist on a classic comfort food favorite, this creamy and flavorful Pumpkin Mac and Cheese is sure to be a hit at your holiday table.

Ingredients

  • 1 lb macaroni noodles
  • 2 cups pumpkin puree
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 1/4 tsp nutmeg
  • Salt and pepper to taste
  • Breadcrumbs for topping

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook macaroni according to package instructions, then drain and set aside.
  3. In a saucepan, combine pumpkin puree, milk, cheddar cheese, parmesan cheese, nutmeg, salt, and pepper. Cook over low heat until cheese is melted and mixture is smooth.
  4. Add cooked macaroni to the cheese sauce and mix well. Transfer to a baking dish.
  5. Sprinkle breadcrumbs on top of the mac and cheese.
  6. Bake for 20-25 minutes until bubbly and golden brown.
  7. Serve hot and enjoy!
