
Rustic Wild Mushroom Risotto
A hearty and comforting dish featuring a rich and creamy wild mushroom risotto with a rustic twist.

Ingredients
- 1 cup arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup dry white wine
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 lb assorted wild mushrooms, sliced
- 1/2 cup grated Parmesan cheese
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large saucepan, heat the broth over low heat.
- In a separate large skillet, melt the butter and sauté the onion and garlic until translucent.
- Add the rice to the skillet and toast for a few minutes.
- Pour in the wine and cook until absorbed.
- Begin adding the warm broth, one ladle at a time, stirring frequently until each addition is absorbed before adding more.
- In another skillet, sauté the mushrooms until golden brown.
- Once the rice is creamy and cooked to al dente, stir in the sautéed mushrooms, Parmesan cheese, and season with salt and pepper.
- Serve hot, garnished with fresh parsley.
