Ingredients

  • 2 cups grated zucchini
  • 1/2 cup crumbled feta cheese
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh herbs (such as parsley or dill)

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a muffin tin.
  2. In a large bowl, combine the grated zucchini, feta cheese, flour, baking powder, salt, and black pepper.
  3. In a separate bowl, whisk together the eggs, milk, and olive oil.
