Stuffed Bell Peppers with Quinoa and Black Beans

A delicious and nutritious vegetarian dish that combines the flavors of quinoa, black beans, and bell peppers.

Ingredients

  • 4 large bell peppers
  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1/2 cup corn kernels
  • 1/2 cup shredded cheddar cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a large bowl, mix the quinoa, black beans, tomatoes, corn, cheese, cumin, chili powder, salt, and pepper.
  4. Stuff the bell peppers with the quinoa mixture.
  5. Place the stuffed peppers in a baking dish and bake for 25-30 minutes until the peppers are tender.
  6. Serve hot and enjoy!
