Stuffed Cornmeal Cake

A traditional Brazilian June Festival treat, this stuffed cornmeal cake is delicious and perfect for celebrating with friends and family.

Ingredients

  • 2 cups cornmeal
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 3 eggs
  • 1 cup milk
  • 1 cup grated cheese
  • 1 cup shredded chicken
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (180°C) and grease a round cake pan.
  2. In a bowl, mix the cornmeal, flour, sugar, butter, eggs, and milk until well combined.
  3. Pour half of the batter into the prepared pan and spread the shredded chicken and cheese on top.
  4. Cover with the remaining batter and bake for 45-50 minutes or until golden brown.
  5. Let it cool before slicing and serving.
