- 4 large portobello mushrooms
- 1 cup quinoa
- 2 cups vegetable broth
- 1/4 cup pesto sauce
- 1/4 cup grated parmesan

Instructions
- Preheat the oven to 375°F (190°C).
- Clean the mushrooms and remove the stems.
- Cook quinoa in vegetable broth according to package instructions.
- Mix cooked quinoa with pesto sauce and parmesan. Season with salt and pepper.
- Fill each mushroom cap with the quinoa mixture.
