Tacos de Carnitas

Delicious street food tacos filled with crispy pork carnitas.

Ingredients

  • 2 lbs pork shoulder, cut into chunks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped cilantro
  • Salsa verde
  • Lime wedges

Instructions

  1. In a large pot, combine pork, onion, garlic, cumin, oregano, salt, and pepper. Add enough water to cover.
  2. Bring to a boil, then reduce heat and simmer for 2 hours until pork is tender.
  3. Remove pork from pot and shred with a fork.
  4. Heat a skillet over high heat and crisp up the shredded pork on all sides.
  5. Assemble tacos with pork, cilantro, salsa verde, and a squeeze of lime.
