
Thai Coconut Lemongrass Soup
A delicious and fragrant Thai soup made with coconut milk, lemongrass, and aromatic spices.

Ingredients
- 4 cups of vegetable broth
- 1 can of coconut milk
- 2 stalks of lemongrass
- 3 kaffir lime leaves
- 1 inch piece of galangal
- 1 red chili, sliced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon of soy sauce
- 1 tablespoon of sugar
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- 1. In a large pot, heat some oil and sauté the onion, garlic, lemongrass, galangal, and chili until fragrant.
- 2. Add the vegetable broth and kaffir lime leaves, bring to a boil then simmer for 10 minutes.
- 3. Stir in the coconut milk, soy sauce, and sugar. Season with salt and pepper to taste.
- 4. Remove the lemongrass, galangal, and kaffir lime leaves.
- 5. Serve hot garnished with fresh cilantro.
