Thai Coconut Lemongrass Soup

A delicious and fragrant Thai soup made with coconut milk, lemongrass, and aromatic spices.

Ingredients

  • 4 cups of vegetable broth
  • 1 can of coconut milk
  • 2 stalks of lemongrass
  • 3 kaffir lime leaves
  • 1 inch piece of galangal
  • 1 red chili, sliced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sugar
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. 1. In a large pot, heat some oil and sauté the onion, garlic, lemongrass, galangal, and chili until fragrant.
  2. 2. Add the vegetable broth and kaffir lime leaves, bring to a boil then simmer for 10 minutes.
  3. 3. Stir in the coconut milk, soy sauce, and sugar. Season with salt and pepper to taste.
  4. 4. Remove the lemongrass, galangal, and kaffir lime leaves.
  5. 5. Serve hot garnished with fresh cilantro.
