Vegetarian Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers
  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the quinoa, black beans, corn, onion, garlic, cumin, chili powder, salt, and pepper.
  4. Stuff each bell pepper with the quinoa mixture and place them in a baking dish.
  5. Cover the dish with foil and bake for 30 minutes.
  6. Remove the foil, sprinkle cheese on top of each pepper, and bake for an additional 10 minutes or until the cheese is melted and bubbly.
  7. Garnish with fresh cilantro before serving.
